Six times a year, Interweave Press puts out Piecework, a magazine devoted to needlework from all over the world. You never know what you're going to find in its pages. Their January issue is traditionally devoted to "historical knitting, and it's always worth a read. Each article is academic yet readable, and most of them are followed by a project based on the historical technique, a modern work-up of a featured historical item, or occasionally something inspired by the article.
The 2014 Historical Knitting Issue features two articles about knitted sailor's hats. The first article is about a fifteenth century Basque whaler's cap, and there's a pattern for it! The second article analyzes knitted artifacts brought up from the ocean floor from the English merchant ship General Carleton, and there's a pattern for a hat from that ship, too. The bonus for us all is that there is also a short article on Spencer jackets, with a pattern for a knitted Spencer included. I think the pattern is one of those "inspired by" projects; the article doesn't mention knitted jackets at all.

Cody was it you who told us about an amazing woman who crocheted Dr Who dolls especially the Paul McGann one? I was wondering if anyone had asked her about doing a Hornblower set.

You'd be on your own figuring out how to crochet an amigurumi HMS Indefatigable, however. Huh. That's a thought.

This evening I was just looking through some back issues of Piecework, and found another gem that may be of interest to you: an issue with three projects devoted to embroidery done by sailors! March/April 2001 Issue of PieceworkOne article is about "woolies," embroidered pictures done by sailors. Another is about the stars embroidered on the crowns of sailor's caps. One of the projects inspired by the articles is a hat with an embroidered star. And right now as of this writing (Feb 1 2014) the digital download (link above) is on sale for $2.99. Looking through their back catalog, I found some really interesting articles. I'll pop back in here and list them as I come across them. HMSCody

I subscribed to Piecework for several years but (sorry) it got too "here's another Estonian lace knitting pattern" and less about other crafts for my taste. I do buy the digital downloads each year, though, and I'm still a sucker for the lace issue each year, despite my snark above.
